Gluten Free Cake



One of my best friends is allergic to gluten and has a mother of all sweet teeth. You can only imagine how hard it is for her, since a vast majority of all baked goodies is very much not gluten free. I love it when she’s coming over, so I gathered quite a few gluten-free recipes to treat her to something tasty.

Garlic Butter Shrimp



Garlic butter shrimp is one of my favorite ways to enjoy the little crustaceans. This dish is so easy and quick, just 20 minutes from start to finish, but the results are mouthwatering, powerhouse of flavors shrimp. Tender, delicious shrimp swimming in a fragrant butter, garlic concoction. There will be the most taunting smell emitting from your kitchen while the shrimp and garlic simmering away, it is so hard to wait for it to be ready. Good thing shrimp cooks pretty fast.

Funnel Cake



This lovely, simple, delicious recipe is something that always reminds me of childhood. I used to spend summers in Maine, at my Grandparents’ house and we would have a fair nearby. These were served at the Fair always, topped with hot fudge or strawberries or honey or ground sugar, and on Sundays my Grandma and I would go to the Fair and she’d always get me a plateful.

Frozen Chicken Breast Instant Pot



Instant pot is an outstanding way to cook the chicken breasts that have been sitting in your freezer with no destination. And the bonus is you can cook them from frozen, no need to thaw out. Once the chicken breasts are cooked in a breezy time they are ready to be used in any of your favorite recipes. I use my chicken breasts cooked in an instant pot to make easy chicken salads, quesadillas and tacos. I also add them to soups, green salads, lasagnas and pastas.

Fried Shrimp



Treat yourself with these juicy on the inside crispy on the outside delicious fried shrimp. The recipe is quick and easy but the result is amazing tasting shrimp with perfect texture. Shrimp is dipped in creamy tangy buttermilk and eggs layer, then cornstarch and seasoned breadcrumbs mixture. They are simply irresistible and an ultimate once in a while splurge. Buttermilk adds a ton of flavor and help to keep the shrimp moist on the inside while boldly flavored breadcrumbs part-take in building the most scrumptious crust on the outside.

Fried Scallops



Scallops are one of the best types of seafood you can get and one of my favorite. They are slightly sweet and buttery. Very delicate, mild flavor is not fishy at all. They are the true “candy of the sea”. If you haven’t tried them you are really missing out, those buttery gems are to die for. The soft and springy texture is decadent – and they melt fabulously on your tongue if cooked just right.

This beautiful summer salad is bursting with colors! The bouquet includes bright yellow corn, green cucumbers and parsley, red cherry tomatoes and onions all tossed in a simple vinaigrette. But it is not just delicious to look at, it does taste amazing as well.
